How about a Puerto Rican Christmas dinner? It would consist of roast suckling pig--lechon, an animal particularly cherished in PR--, yellow rice with beans, and other items such as banana pies, which are a mass of banana dough stuffed with white beans and meats such as chicken and pork, wrapped in banana leaves, and boiled in water with salt. There is also a P Rican way of fixing turkey, in which the bird is dressed as if it were suckling pork--pavochon--, with the result that you get a bird much more tasty than the usual Xmas turkey.

That sounds like a delightful challenge, I'm always looking for new ways of making meat dishes and pies :)
